Depending on where the camellia sinensis grows, it will create very different types of tea. Soil and climate are two very important factors when growing tea.
Traditionally, tea is therefore divided into three different groups: China tea, India tea and Hybrid tea.
China tea plants have small leaves and can grow at very high altitudes.
India tea is also known as Assam tea and prefers lower altitudes.
India/Assam tea has larger leaves than China tea. The third group is where we find the hybrids that have been formed by crossing Chinese tea plants with Indian tea plants.
